Irresistible Peanut Butter Cookies

  • 3/4 cup creamy peanut butter
  • 1/2 cup butter flavor crisco shortening
  • 1 1/4 cups firmly packed brown sugar
  • 3 Tablespoons milk
  • 1 Tablespoon vanilla
  • 1 egg
  • 1 3/4 cups flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon baking soda

Directions:
    1. Heat oven to 375F
    2. Place sheets of foil on countertop for cooling cookies.
    3. Combine peanut butter, crisco, brown sugar, milk, and vanilla in a large bowl.
    4. Beat at medium speed with electric mixer until well blended.
    5. Add egg, beat just until blended.
    6. Combine flour, salt and baking soda.
    7. Add to creamed mixture at low speed, mix just until blended.
    8. Drop by heaping teaspoonfulls 2 inches apart onto ungreased baking sheet.
    9. Flatten slightly in crisscross pattern with tines of fork.
    10. Bake at 375 for 7 - 8 minutes, or until set and just beginning to brown.
    11. Cool 2 minutes on baking sheet, remove cookies to foil to cool completely.
    12. Makes aobut 3 dozen cookies

*** Melinda Winslow - Germany 2006 - This will keep for 3 to 4 months without refrigeration. The recipe is from the butter flavor crisco package.
