Ingredients:
- Cream together:
- 2 eggs
- 1/2 Cup brown sugar
- 1/2 Cup sugar
- 1/2 Cup cooking oil
- 1 Cup shredded zucchini
- Blend dry ingredients:
- 1 Cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 teaspoons cinnamon
- 2 teaspoons vanilla
- 1/2 Cup chopped nuts (optional)

Directions:
1. Pre heat the oven to 350F (176C)
2. Beat eggs; add sugars, oil, and zucchini.
3. Sift dry ingredients together.
4. Add dry ingredients to liquid mixture.
5. Stir in vanilla and nuts.
6. Pour into 1 well-buttered and floured 5"x9" loaf pan.
7. Bake for 50 minutes it is done when a toothpick comes out clean.
8. Cool at least 10 minutes before removing from pan.

friend Swami. I don't even remember how many times I've made this recipe while in
Germany, it was so nice to make something that is so appreciated. You can also make
zucchini cookies, I altered this recipe a bit and it works great!(See Mels Zucchini
