Ingredients:
- 1 Cup flour
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 Tablespoon shortening
- aprox. 1/4 Cup warm water
- Oil for deep frying

Directions:
The word Sopapillas, and the list of ingredients above, is all
that is written on the piece of paper, about the size of a 3 x 5 card.
So the directions are from memory and years of experience.
1. Heat cooking oil in a pan/container for deep frying.
2. Combine the dry ingredients in a bowl.
3. Cut-in the shortening(the firm stuff) using a pastry cutter or fork.
4. Now add in the warm water gradually, stiring with a fork.(dough will be crumbly)
(Keep a little flour out to lightly cover your rolling surface)
5. Knead until smooth. Divide the dough into balls, and roll out using a glass.
6. Cut into 3" triangle/squares.
7. When the oil is hot. "Carefully" Drop sopapillas into the oil. Fry, serveral at
a time. They will puff up, so stay close and turn them so they brown evenly about
30 seconds on each side.
8. Serve with honey "Like they do at the "Cactus Restaurant" in Deming, NM, or with
cinnamon and sugar as they do in some other places.

Notes:
*** Melinda Winslow - I had a "Presto FryBaby" in the
1970's and that was perfect for making sopapillas. If you've never heard of
a "FryBaby" you might ask someone that was around in the '70's but really it
was just a deep-fryer. So, just out of curiousity I did a search, and it
looks like they still make the "FryBaby"!! Cool...
