Red Velvet Cake (and Icing)

  • Liquids:
  • 1 1/2 Cups oil
  • 1 Cup buttermilk
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 oz red food coloring

  • Dry Ingredients:
  • 2 1/2 Cups + 1 Tablespoon flour
  • 1 1/2 Cups sugar
  • 1 Tablespoon cocoa
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

Directions:
    1. Bake at 350F for 30 - 35 minutes*
    2. Mix liquids in mixing bowl.
    3. Sift dry ingredients and add gradualy to liquid; mixing all the time. Beat well.
    * until center springs back when touched lightly.

*** HomeEc 7th grade 1973 - This was my first exposusre to Red Velvet Cake .... and it has been a favorite ever since.
ICING FOR RED VELVET CAKE
Melt 1 stick butter.
Stir in 1 6oz package Cream cheese
add 1 box powdered sugar
and 1 cup pecans (if desired)
Beat well.
